PROSTICK NDL-XT is an enzyme preparation containing xylanase with additional lipolytic activity for the treatment of flours used in wheat noodle manufacture.

Application^BR-PROSTICK NDL-XT is used for the treatment of wheat flour-based noodle products and pasta. Flours treated with PROSTICK NDL-XT during the noodle manufacturing process ensure:^BR-• whiter colour of noodle and reduced speckiness^BR-• increased firmness (“bite”) of cooked noodles and pasta^BR-• increased cooking tolerance and reduced stickiness^BR-• better colour stability of fresh undried noodles^BR-• less oil absorption (in deep fried instant noodle process)^BR-• ability to reduce Gluten addition for strength
